Quick | Easy | Affordable: Shrimp Alfredo

Shrimp Alfredo!

I get so tired of chicken sometimes, last night I was going to make alfredo pasta without any meat. Then I remembered I had frozen shrimp in the freezer just waiting to get out. 😅

Reasons why I love this recipe:

  • Quick (20-25 min)
  • Easy
  • Delicious
  • Affordable ($10ish)
  • Protein (not a primary source, but a source)
  • Shelf-life
Ingredients:
  • Fettucine (bonus points if you find protein-pasta)
  • Alfredo sauce (I like Prego)
  • Shrimp (raw, peeled, no shell)
  • Butter
  • Garlic clove (or powder)
  • Onion powder
  • Basil
  • Oregano
  • Paprika
  • Salt
  • Pepper
  • Parmesan (optional)
Measurements are made by my heart’s desire, not by ounces or tablespoons.
I'll let you eyeball it too since it's your life, not mine.😜

Steps:

  1. Boil pasta in salt water for 20-25 min
  2. While pasta cooks, thaw frozen shrimp
  3. Peel and finely dice garlic clove (skip if using garlic powder)
  4. Once pasta is cooked, drain water and add alfredo sauce. Stir, cover, and simmer.
  5. In a separate skillet, melt butter.
  6. Sauté finely diced garlic (skip if using garlic powder).
  7. Add thawed shrimp and season with salt, pepper, basil, oregano, paprika, and onion powder (add garlic powder if no garlic clove). Cook in skillet until shrimp is no longer translucent.

That's it!

 Optional steps:

You can mix the shrimp in with the pasta after it's cooked and serve, or serve the pasta and top it with shrimp (my preference). We also like to add parmesan to our pasta meals, but again, preference.

If you gave this recipe a go, let me know! 💕
